FLOURLESS CHOCOLATE CAKE

FLOURLESS CHOCOLATE CAKE
Ingredients
- ½ cup water
- ¼ teaspoon salt
- ¾ cup white sugar
- 2 tablespoons instant coffee
- 18 oz dark chocolate
- 1 cup unsalted butter
- 6 eggs
- Preheat oven to 300 degrees F. Grease one 10-inch round spring form cake pan and set aside.
- In a small saucepan over medium heat, combine water, salt, sugar, and instant coffee until sugar is dissolved. Set aside.
- Either in the top half of a double boiler or in a microwave oven, melt the dark chocolate.
- Cut butter into pieces and use mixer to beat the butter into the chocolate one tablespoon at a time until butter and chocolate are combined. Beat in warm sugar/water/coffee mixture until combined.
- Slowly beat in the eggs one at a time.
- Pour batter into prepared spring form pan. Using a pan larger than the cake pan, place filled cake pan into larger pan and fill pan with boiling water halfway up the side of the spring form pan.
- Bake cake in water bath at 300 degrees F for 45 minutes. The center will still look wet when done. With cake still in spring form pan, allow cake to come to room temperature. Place cake in the refrigerator overnight to chill completely.
- To unmold, dip the bottom of the cake pan in hot water for 10 seconds and invert onto a serving plate.
Ganache
- 1 cup heavy whipping cream
- 10 oz bittersweet chocolate
- Heat whipping cream to almost boiling on stovetop or microwave (do not boil).
- Pour over bittersweet chocolate and stir until melted and combined.
- Pour ganache over top of cake.
- Refrigerate for at least 8 hours.
- Cake is now ready to serve.

A major pruning should be done once a year, in January or February.
Remove any dead, dying, or crossing branches, and shorten the mature canes by one-third to one-half. You can also prune any stray branches to help improve the plant's shape.
